A Land of Fire and Ice

Iceland became a hot destination and so I had to go see what all the hype was about.  What I discovered was a surprise!  I had no idea what a vibrant food scene they have in Iceland.  Naturally they have wonderful fish and seafood, it is an island after all, but the meat, vegetables and other dishes were amazing as well.    The main reason people are attracted to this country is because of the beautifully diverse scenery.  There is also a lot to do if you are an outdoor enthusiast, and don’t mind bundling up to pursue things like glacier trekking, snowmobiling, hiking to icy waterfalls, and swimming in thermal lagoons.  My only disappointment was not seeing the Northern Lights, but this seems a great reason to return another time!
